German Potato Salad

2 # cooked peeled red salad potatoes (can use white) 1/2 # bacon (I prefer hickory bacon, but any bacon will work) 1/2 cup flour (to absorb grease) 1/2 cup sugar 1/2 cup regular white vinegar 1/2 quart warm water (approximate) Cut up bacon with scissors and fry until bacon is crispy. Sprinkle flour into bacon and grease (just enough to absorb grease). If bacon is excessively greasy, you can spoon some out before adding flour And warm water and stir in vinegar and sugar. Add cooked peeled and diced potatoes. Salt to taste. Some people add a little onion and celery. |
