Broccoli Soup

 

        1. Cook one chopped onion and carrot in oil until softened.

        2. Stir in ¼ cup flour and cook another minute or two.

        3. Add 3 cups of broth, and 2 cups of milk.

        4. Reduce the heat and simmer

        5. Stir in a chopped up head of broccoli and some shredded cheese.

        6. Cook about 5 minutes or until tender.

        7. Add a teaspoon of salt and some black pepper.

        8. Use hand blender to make a smooth soup.

        9. Adjust salt and pepper to taste
